Milky Way

- SERVES 8
- 120 ml (4 oz.) Irish cream liqueur
- 500 ml (16 2/3 oz.) whole milk
- 250 ml (8 1/3 oz.) 35% cream
- 4 egg yolks
- 1/3 cup sugar
- 4 cinnamon sticks
- 2 slices of ginger
- Zest of 1 orange
Whisk eggs and sugar until pale in colour and thick in a large bowl. Set aside.
Bring cream and milk to a slight boil in a saucepan. Stirring with a spatula, add Irish cream liqueur, cinnamon, ginger, and orange zest.
Pour hot milk over egg mixture, still whisking.
Let cool for about 30 minutes.
Strain using a sieve and refrigerate for 4 hours.
Serve plain, on ice, or garnished with whipped cream and ground cinnamon.
