In charge of the parcels acquired by his uncle and grandfather, Mathieu Deiss works his vines according to biodynamic principles and uses little or no sulphites in his wines. This white is made of Gewurztraminer, where 20% of the grapes undergo skin maceration. The result is textured and offers all the aromatic profile of the varietal.
