Ricotta, tomato and ham tartine

Ingredients
- 250 ml (1 cup) firm ricotta cheese
- 45 ml (3 tbsp) sun-dried tomatoes, finely diced
- 2 green onions, thinly sliced
- Salt and freshly ground black pepper
- Olive oil
- 185 ml (3/4 cup) cherry tomatoes, cut in half
- 4 slices of multi-grain or country-style bread
- Butter
- 8 thin slices of Serrano ham or prosciutto or Parma ham
Preparation
- In a bowl, combine the cheese, sun-dried tomatoes and green onions.
- Season with salt and pepper. Stir.
- In another bowl, drizzle olive oil over the cherry tomatoes.
- Season with salt and pepper. Stir.
- Toast the slices of bread. Butter them very lightly.
- Spread some cheese mixture on each toast.
- Add two slices of folded ham.
- Top with cherry tomatoes.
- Drizzle with a little oil. Serve.
