The Highland Park distillery is well-known by fine scotch lovers. Located atop the city of Kirkwall, it is the northernmost of Scotland and stands out as one of the few to malt part of its own barley and use its own peat (mixed with heather) for the drying period. Aged in sherry casks, this 10-year single malt is velvety, slightly smoked and offers accents of orange peel, honey and butterscotch.
