An innovation from the Masi estate – pronounced Mazi – double fermentation offers an alternative that sits midway between Amarone and non-appassimento Valpolicella. The double fermentation process involves re-fermenting a wine made from ripe, but non-dried grapes with grapes that have undergone appassimento. This technique gives the wine greater structure and concentration, along with more mature and evolved aromas. Perfect with empanadas or meat-filled cannelloni.
