"The 2021 Savigny-lès-Beaune La Dominode 1er Cru has another complex bouquet from Pavelot, predominantly red fruit infused with damp earth, iodine and pressed iris flower aromas. The palate is medium-bodied with firm but quite chiselled, almost chalky tannins, certainly very saline with a focused, peppery finish that leaves the mouth tingling for 60 seconds afterwards. "Under the benevolent eye of Dominique Lafon since 2006, Caroline Gon has managed the 26 hectares of vines of this estate, a beautiful locomotive of the Mâconnais terroirs: She now joins her husband Frantz Chagnoleau on the eponymous estate, and hands over responsibility for the wines to her colleague Elsie Moore. Léa and Pierre Lafon, Dominique's children, are now at the helm of the estate, whose vines are certified organic. Nearly 170,000 bottles are produced with great regularity of quality, in a pure and chiselled style, without ostentatious oak, combining ageing in tuns and demi-muids."
