Brunch pizza with mascarpone and strawberries
Ingredients
Pizza:
- 454 g (1 lb) store-bought pizza dough
- 275-g (about 1-cup) container mascarpone, softened
- Zest and juice of 1 orange
- 454-g (16-oz) container strawberries, thinly sliced, as garnish
- Mint leaves, as garnish
Candied pistachios:
- 60 ml (1/4 cup) sugar
- 30 ml (2 tbsp) water
- 250 ml (1 cup) pistachios, unsalted and shelled
Preparation
Candied pistachios:
- In a saucepan over high heat, combine all the ingredients and stir until the sugar crystallizes on the pistachios.
- Set aside.
- Preheat the oven to 200°C (400°F).
Pizza:
- In a bowl, combine the mascarpone with the orange juice and zest, then add half of the candied pistachios.
- Coarsely chop the remaining pistachios.
- Set aside.
- Roll out the pizza dough and place it on a baking sheet lined with parchment paper.
- Spread the mascarpone mixture over the dough.
- Bake for about 25 minutes or until the dough is golden brown.
- Before serving, garnish with strawberries, remaining candied pistachios and mint leaves.
