Brunch pizza with mascarpone and strawberries

  • 454 g (1 lb) store-bought pizza dough
  • 275-g (about 1-cup) container mascarpone, softened
  • Zest and juice of 1 orange
  • 454-g (16-oz) container strawberries, thinly sliced, as garnish
  • Mint leaves, as garnish

Candied pistachios:

  • 60 ml (1/4 cup) sugar
  • 30 ml (2 tbsp) water
  • 250 ml (1 cup) pistachios, unsalted and shelled


Candied pistachios:

  1. In a saucepan over high heat, combine all the ingredients and stir until the sugar crystallizes on the pistachios.
  2. Set aside.
  3. Preheat the oven to 200°C (400°F).


  1. In a bowl, combine the mascarpone with the orange juice and zest, then add half of the candied pistachios.
  2. Coarsely chop the remaining pistachios.
  3. Set aside.
  4. Roll out the pizza dough and place it on a baking sheet lined with parchment paper.
  5. Spread the mascarpone mixture over the dough.
  6. Bake for about 25 minutes or until the dough is golden brown.
  7. Before serving, garnish with strawberries, remaining candied pistachios and mint leaves.
