At the Thymiopoulos family estate, everything is done according to the precepts of biodynamics. Highlighting the Xinomavro grape variety from old vines, part of this cuvée also benefits from whole-cluster vatting. Aging in French oak barrels then contributes to the complexity of the wine, also blessed with a generous tannic structure. Wonderful with grilled lamb chops.
