Counting 32 hectares, Château Jolys is the largest estate of the Jurançon. Established during the 1960s by Pierre-Yves Latrille, it has been managed by his daughter Marion from 1999 and bought by local businessman Michel Boutin in 2019. The cuvee is entirely fermented in stainless steel vats to better preserve the aromas of Petit Manseng and Gros Manseng (preserved white fruits, pineapple, honey and pine) that shine through the fatty texture, which lasts in a persistent finale.
