We knew it was permeable to its soil, but Riesling takes on a whole new dimension at this Alsatian address. Indigenous yeasts, matured on lees, unfiltered, it is marked by flavours of honeydew, lemon and coriander. The tight palate also offers some fattiness, an irreproachable balance and a minerality that persists on the finale. The energy needed to compensate for fried fish or to blend in with a salmon tartare.
