The sixty hectares owned by the Fouassier family in Sancerre are cultivated according to the precepts of biodynamics. Fermented with indigenous yeasts before spending 12 months in barrels, this Pinot is then bottled without filtration. Elegant and silky, it leaves an impression of black cherry and red berries mixed with floral and mineral notes. Quite the treat with a piece of salmon or grilled quail.
