Finance specialist and lover of Burgundy wine, Moray Tawse established himself on the hills of the Niagara Escarpment in 2001. With the help of Quebec-born consultant Pascal Marchand, he acquired many vineyards in the region, many of which planted with old vines. The Quarry Road parcels allow for fine, elegant and sleek Chardonnays, which can evoke those of Chablis. Provided with a certain liveliness and undeniable minerality, its well dosed woody side fits perfectly with scents of yellow apple, pear and is even a bit reminiscent of toasted sesame.
