Pleasantly puzzling, this eclectic blend combines typical Piedmont varieties as well as a touch of Sauvignon Blanc. As they are all co-planted, the bottom line is that Mother Nature is the boss of the blend for each vintage! After natural fermentation, the wine benefits from aging on lees for nine months to make it a well-rounded cuvée, before being bottled without filtration with a hint of residual sugar, which will transform into carbon dioxide. The result? A quite dry and generous wine, with a touch of very fine bubbles which bring plenty of thirst-quenching freshness. Dare it as an aperitif!
