The son of the great Marcel Deiss, Mathieu still works at the family business, but started this personal project on the side in 2013. It follows the same philosophy, which is to let the personality of the wine shine, while favouring biodynamic principles and leaving the indigenous yeasts work their magic. Aged on fine lees for a year, this wine is unapologetically mouth-filling and reveals scents of lemon and flowers. Great as an aperitive or with spring rolls.
