Fascinated by the rare and ancient grape varieties that line Lake Bolsena, an hour north of Rome, Andrea Occhipinti even made them the subject of his master's thesis in agronomy. He then rehabilitated abandoned plots of aleatico and grechetto, and has since been working to deliver the region's unique volcanic terroir in bottles. Low yields, manual harvesting, natural yeasts and no added inputs are the hallmarks of this cuvee, along with a 30-day maceration and aging in amphora. It is a delight to serve slightly chilled with cutlets of veal parmigiana.
