Because " même dans le sud, ça pinote" in the words of Pierre André Ournac, from Domaine Coudoulet. An expression which means that the wine manifests all the varietal character of Pinot Noir with its scents of crunchy red fruits and its supple tannins. Although of Burgundian origin, this grape variety does well in the slightly warmer clay-limestone terroir of this part of Languedoc-Roussillon ... especially at this price! Serve chilled with a croque-monsieur or grilled Toulouse sausage.
