Interestingly, part of the tank of what would become this red wine was "bled" after a few hours of maceration. This way of doing things therefore makes it possible to produce a rosé wine, but also to concentrate the rest of the vat, now benefiting from a greater “grape skin” vs. “juice” ratio. It allows to produce a red with a certain concentration, but which remains quite easy-drinking thanks to a very welcomed acidity. A real delight both fruity and peppery, to be enjoyed slightly chilled with a veal chop or grilled pork tenderloin.
