While 80% of the apples used to make this cider were picked very ripe and lightly sundried for more intense flavours, they were then crushed and left to ferment using native yeasts. A long cold fermentation follows, before the cider is bottled without being filtered, loaded with a touch of residual sugar to promote natural foaming.
