  1. Established in 1995, E9 Farmhouse is the first craft brewery to emerge from Tacoma, at first to supply the Original Engine House No.9 pub and restaurant. Following the success of its beers, distribution now extends to Canada, to our delight. Very complex, this season fermented in casks transmits notes of citrus, cereals, apple peel and tangy berries. The wild notes are well-balanced and the finish is dry and very satisfying.

The ‘’Goût Américain’’ (American taste) version is a way of identifying this blend of lambics aged 1 to 3 years displaying a particularly high level of volatile acidity… A defect for some, but an acquired and pleasant taste for others. You’ll find in succession a myriad of fruity aromas, white and red grapes and notes of citrus, dried herbs, and a well-balanced woodiness.

Belgian brewery 3 Fonteinen, from Beersel, specializes in lambic-style beers. This ‘’Golden Blend’’ version is the 24th blend of the 2017-2018 season, the oldest lambic having been brewed in March 2014. The nose will enthrall you with its superior aromatic power, leading to fragrances of grilled sesame and smoke, along with aromas of apricot, pineapple and a spicy touch. Without a doubt a meditation beer in which the blend and aging times bring power, complexity and persistence.

As the name implies, this brew was the ‘’desire’’ of Willem Van Herreweghe, master brewer at Timmermans (formerly known as Brasserie de la Taupe). Aged 2 years in oak tuns and refermented in bottles, this beer unveils itself as fruity and roasted, with nice bitterness and creamy foam.

Favourite beer of the brewer’s wife, named Nathalie and kindergarten teacher, the ‘’Nath’’ sports on its sticker an illustration of the teacher made by her pupils. It’s a blend of lambic and rhubarb, the latter adding a vegetal and tart aspect. Simultaneously funky and fruity, the mouth puts forth tangy and slightly earthy notes. Original and very complex, the dry finish ends on a delicate woody touch.

Called ‘’Foufoune’’ by those close to him, François Daronnat is an apricot grower and a valuable collaborator for Cantillon. Indeed, his ‘’Bergeron’’ apricots (a very sweet and acidic variety) are blended with 18- to 20-month old lambics, in a proportion of 300 g of fruit per liter. Elegant and complex, this beer has an exotic nose, an invigorating and creamy mouth along with impressive persistence. A masterpiece!

For Cantillon, Bruocsella is the missing link between the world of wine and beer. Not fermented in bottle, this beer has no effervescence. Produced from a unique lambic aged three years in barrels, it develops remarkable oxidative and acidic complexity featuring mandarin, peach and lemon accents. A work of art!

The ‘’Vigneronne’’ cuvee is a blend of lambics aged 16 to 18 months, mixed with Muscat grapes from Italy, bought at the end of the season to insure the best maturity possible. It offers lovely complexity with its wild fragrances; the Muscat brings fruitiness, reducing somewhat the tangy perception and adding spellbinding scents of peach, white flowers and citrus, along with a delicate woody touch. The mouth is ample and the finish is dry, the bitterness is well-balanced and unveils a pleasant aromatic persistence.

  14. A blend of lambics aged 16 to 18 months in a barrel containing berries of the Merlot grape from Bordeaux, this cuvée inevitably bridges the world of beer and wine. A very pleasant discovery where a fruitiness and an obvious wine touch emerge, in which the tannins of the grapes are also delicately perceptible.
