We’re lucky in Quebec with the wide variety of local cheeses to be able to make a fondue to our liking according to the aromatic profile of the cheeses chosen. And to make the most of this great choice, why not ignore tradition and try revisited fondues that are out of the ordinary? Here are some suggestions.
Medieval fondue in a bread bowl
You don't have to be a fan of Dungeons and Dragons or Game of Thrones to enjoy this medieval fondue! Served in a bread bowl and accompanied by rye bread or gingerbread, it has a charming rustic look. Light the fireplace and some candles, and get into a yesteryear ambiance.
To make it, choose a cheese that contains in addition to cow's milk, goat's and sheep's milk, such as Le Verdict d'Alexina, and add honey and spices commonly used in the Middle Ages (cinnamon, nutmeg, ginger). Flavours that will be fully enhanced by a lively and thirst-quenching sparkling mead, low in sugar and low in alcohol, with a good taste of apple.
If you like less intense cheeses made from 100% cow milk, Le Baluchon is also an excellent choice for this fondue.

Exotic Indian-inspired fondue
Are you a fan of Indian food? Take this exploration of revisited fondues up a notch. Try this harmonious blend of spices typical of this gastronomy (curry, cumin, turmeric, etc.) and L'Anglais des Cantons. A tasty nod to Anglo-Indian cuisine and the many long-standing culinary borrowings between various cultures.
For a surprising pairing, enjoy this exotic fondue with a macerated wine (orange wine) with beautiful freshness and a more sustained body than a classic white wine, without being too robust. For dessert, or at any other time you want, let yourself be charmed by the harmonious marriage of a cheese with lactic flavours and medium intensity such as Le Cabouron and dark chocolate. It’ll be wonderful accompanied by fruits you like as well as with nuts, dried fruit and walnut and raisin bread.
To serve alongside it, go for a low-alcohol bubbly. The effervescence always brings a pleasant digestible side, while the residual sugar in this dealcoholized sparkling cider will pair perfectly with these dark chocolate-covered bites.
